FIG PIE
Ingredients depend on what looks good in the cupboard or the shops..
4 tablespoon is melted butter
1 cup of slivered almonds
3/4 cup flaked almonds
1 cup brown sugar
1/2 cup plain flour
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
pinch salt
1/4 teaspoon almond essence
seeds from a vanilla bean (could use vanilla essence)
handful of glace ginger (could use other glace fruit) chopped to smallish pieces
decent dash of maple syrup
Put all the above into a mix-master & let it whiz around for a minute,
add 3-4 eggs, that have been beaten, into the mix-master & whiz for another 30 seconds or so
Add in 1/2 punnet of blueberries into the mix
Pour mixture into a greased baking tin
Take 12 or so beautiful ripe figs and cut off the stems
slice figs in half & put face up on the top mixture in the tin
I like to thrown on a few more blueberries at this point
pour on a few swirls of maple syrup generally across the top, try to get the maple syrup onto the open figs
the fruit will likely sink a bit into the top of the pie, but don't worry
Whack into a preheated oven at 160 degrees - depending on how hot your oven is could be 20-30 minutes
Best served with Greek Yoghurt + a final swirl of maple syrup
